Red is a vibrant and beautiful color and rich red bell peppers are full of vitamin A, which makes bodily tissues more resistant to colds and promotes growth and the feeling of well- being.  The vitamin B in red peppers aids food absorption and normalizes the brain and nervous system by increasing metabolic processes.  Peppers have up to six times more vitamin C than oranges and are antibacterial.

Orange is the color for carrots that are excellent detoxifiers and will alkalinize, cleanse, nourish and stimulate almost every system in the body.  Carrots are wonderful for the liver and digestive tract and they help kidney function, prevent and treat cancer, balance the endocrine and adrenal systems, depress blood cholesterol and increase bulk elimination from the colon.

Purple eggplant is 90 percent water and low in calories.  It helps clear stagnant blood by dissolving the congealed blood and accumulations such as tumors.  It also has a hemostatic action that reduces bleeding.  Eggplant is a rich source of bioflavonoids, which renew arteries and prevent strokes and other hemorrhages.  It has a soothing and stabilizing effect on the nervous system and a protective action on arteries damaged by cholesterol.

Blue is for blueberries which are a great laxative and blood cleaner, improving sluggish circulation and benefiting nocturnal vision.  Blueberries protect against the development of cataracts and peptic ulcers and have a healing effect on any infection of the mouth.  They rejuvenate the pancreas and their antiseptic value helps relieve dysentery.  Blueberries are one of the fruits that are highest in iron.
